That would be a Prickly Pear Cactus and the red fruit provides many with jelly. It does look out-of-place with a dusting of snow. A little embarrassed in hindsight, but I used to take a pick axe and "murder" these succulents on our 40-acre Colorado ranch. I didn't like my horses brushing against them and being the recipient of the cactus spine when cleaning hooves.
