During the Summer, we love reaping what we've sown, especially fresh from the garden tomatoes!
Tomatoes with Basil
3 - 4 Garden Tomatoes
4 - 6 Inch Sprig of Sweet Basil
1 teaspoon to 1 tablespoon Vinaigrette or Italian Dressing
Salt and Pepper to Taste
(Sometimes I add a clove of Garlic, but not always)
Begin by removing the leaves at the bottom of the basil. Leave the top two to four leaves. (I'll tell you why in a different post.) Coarsely chop the leaves and stir them with the vinaigrette.
Chop the tomatoes. I use the handy dandy Vidalia Chop Wizard.
Toss with basil. Add salt and pepper to taste.
