Finding Blessings. Crock Pot Cobblers.

March was a tough month.  Two of my aunts as well as my adopted father-in-law have been in the hospital.  Broken hips, a displaced back and an emergency surgery in the middle of the night.  ICU waiting rooms are stressful places to be.  The sense of helplessness is so very difficult when all you want to do is make a positive difference for your family.
 
The blessings?  Seeing miracles.  Knowing The Great Physician has a plan.  Moving to rehab.  Watching people I love and admire set the example of how to behave when life doesn't go as planned.  Hugging cousins.  Spending time with family.  Being with friends that will never, ever turn away.  Grace.  Sharing recipes while you wait for test results.
 
If you don't mind I'd like to switch gears and share a couple of Crock Pot Cobbler recipes with you!
 
Diabetes is very prominent in our families.  A dear friend, Joyce, shared this easy peasy recipe with one of my cousins while we were at the hospital.  Even though Handsome Husband and I are not currently diabetic, there are only three ingredients and you make it in your crock pot! 
 
Joyce's Blackberry Crock Pot Cobbler
 
2 Bags Frozen Blackberries
1 Box Sugar Free Cake Mix
1 Bottle of Diet Sprite
 
In your crock pot, dump out the blackberries.  Sprinkle cake mix over them, breaking up any clumps.  Pour the Diet Sprite over everything.  Turn your crock pot on high.  It doesn't take long for the crust to form on top.
 
When I got to the grocery store register, I'd forgotten the Diet Sprite and didn't want to walk back to the soda aisle.  I found a Diet Mountain Dew in one of the refrigerators near the register.  The cobbler was delicious!  I guess any lemon lime soft drink would work?  Any advice?
 
This week I tried another twist.
 
Marci's Peach Crock Pot Cobbler
 
2 Bags Frozen Peaches
1 Box Cranberry Orange Muffin Mix
1 Diet Mountain Dew
 
In my crock pot, I dumped out the peaches along with the can of cranberries that came with the muffin mix.  Next I sprinkled muffin mix on top breaking up clumps and topped it off with Diet Mountain Dew.  Again, it tasted GREAT!
 
Photos?  Well, no.  We eat like Jethro and Jethrine Bodine!  ;-)

  1. Goodness me what a bombardment! It is said that "things" go in threes, and in your family's case t'would seem to be horribly true. All added to my ever-expanding prayer list (it is a daily occurrence), so keep in touch and let me know how everyone progresses.

  2. I hope April brings some reprieve and all the strength that you and your family need. Thanks for the recipe! My mom is diabetic and I'm always looking for appropriate food to share. I will definitely try this. How long does this sit in the crock pot, total?

  4. Positive thoughts flowing your way Marci! That's your three though so the rest of the year is clear :) Definitely trying this recipe- think it will work if you use non-diet soda?

  6. Sorry for your trials. Ephesians 3:20 is the verse we have been holding onto of late:) This looks great-our mom is diabetic so this would be a great treat for her. pinning. found at snickerdoodle sun. Have a great week.
