Let's Have a Picnic!



Mother's Day is just around the corner.  My family will be asking what I'd like to do.  I'm always excited for a picnic!  Today's post is a super simple salad for Summer as part of the monthly Pinterest Challenge.  This recipe is easy enough for kids to help make, and the ones around here love to eat it!

It begins with a pin for KFC Coleslaw (copy cat).  I've made Sabrina's Sauce for traditional shredded cabbage coleslaw, but today, I'm making it for a broccoli version.

First up, I mix Sabrina's Sauce together, making two changes.  Buttermilk isn't something that's usually in our fridge, so I substitute non-fat Greek yogurt and I also skip the regular milk in her recipe.  Everything else is the same as hers.  It can be made the day before.



Broccoli Salad

KFC Coleslaw Sauce (copy cat)
1 package broccoli, just the florets
1 apple, cored and finely chopped
1/4 red onion, finely chopped
1/2 cup sunflower seeds
1/2 cup golden raisins

For the broccoli, I just snap away the florets with my hands.  Children could certainly help with that.  The apple is cored and cut into tiny pieces using the smallest screen on my Vidalia Chop Wizard.  This recipe really doesn't need much onion.  I cut the purple onion into fourths, choose the smallest quarter and run it through the smallest screen on my Vidalia Chop Wizard.  Kiddos could measure and add the raisins and sunflower seeds.  Everything gets tossed with the sauce.

Super simple, huh?  ;-)




It's the perfect side for grilled meats, but I'm OK with Broccoli Salad being the main course!  Any meal prepared with love is something special!  Let's have a picnic!

  1. I always add apples and raisins to my broccoli salad too. I love a good broccoli salad. Yum! I'm pretty sure the most we'll be doing for Mother's day is going for a hike or a walk since all our restrictions will still be in place then.

  2. Thanks for the party. Our governor extended our quarantine till May 26 so no Mother's Day or Memorial Day celebrations for us.

  4. This salad looks delicious. Can't wait for my next trip to the grocery store to buy the ingredients to make this. Unfortunately, I've already been this week so I guess I that means I won't be able to make it until next week. Finally, something to look forward to!

  10. I like the sweet bite of raisins in my broccoli salad. When I make it, I give the broccoli florets a quick steam in the microwave before mixing. I like the texture better.
