Vegan Crackers
Thanks to The Vegetarian Mother's Cookbook, I've discovered this wonderful recipe for vegan crackers. Perfect for my goals in 2013.
The recipe calls for specific seeds, but you know me. I just used what I had on hand. I used equal parts: lentils, broccoli and mung bean seeds for sprouting, pinto beans, hulled sunflower seeds and a four grain oatmeal.
Cover the seeds with water and let soak overnight in the fridge, so the seeds are softened. The recipe doesn't mention herbs, but I have a couple of greenhouses. So some herbs were snipped from them.
I chose garlic, sage, thyme and rosemary.
I used my food processor to pure' the softened seeds along with the herbs.
Next, the pure' is scooped onto a cookie sheet and given a generous sprinkle of sea salt.
They are baked in a 200 degree oven until dehydrated. Happy, healthful snacking thanks to The Vegetarian Mother's Cookbook!

Easter Basket
Easter is just around the corner. Would you like to see my idea for baskets this year?
The Pattern is from Anna at Noodlehead . I love, LOVE, LOVE this pattern, especially the nice big pockets across the front.
You might remember some of the fabric from my post about the Bassinet . I thought it would be nice to have a functional basket after the holiday to organize socks or maybe hair bows. Won't it be cute setting on her dresser?

Doodles

Being Thankful...
Many of you read about our Exciting News and then our Horrible Day .
There was a moment when I was staring out our dining room window crying, when my Handsome Husband suggested I write Thank You notes. He is a wise man.
Expressing gratitude during this difficult time has been a healing balm.
God has sent angel after angel with just the needed item at just the right time. On several occasions, the angel was someone we had never met. While Thank You notes have been written, they just don't seem like quite enough.
Thank you to everyone who has prayed for our family. Thank you to the ones who have donated items or money. Thank you for calling just to check on us and to say "I love you". Thank you most of all to the ones who have hugged those precious children. We are truly grateful.

'Got Eggs?
Have you met Dahlia and Hyacinth? Our two youngest hens.
Aren't they pretty?
With the sweet hens living in our backyard, we are always looking for egg recipes. Check out my RECIPES page to see some of our other faves.
There is also LOTS of dill in the greenhouse!
Deviled Eggs are a great way to use both eggs and dill!
A nice big handful of Dill
6 Hard Boiled Eggs
1/2 cup mayonnaise
1/4 cup sweet relish
1 teaspoon spicy mustard
The dill needs to be finely chopped, but save a little for garnish. I use a slap chopper thing from Pampered Chef. Cut the eggs in half and pop the yolks into a bowl. Mash and stir the yolks with the rest of the ingredients. Scoop the yolk mixture back into the egg whites and garnish.
We love these on weekends! They are a great side dish or snack!

Last week our daughter's gorgeous little girl was born. What joy! On Monday she saw her doctor who confirmed what we already knew. Our beautiful granddaughter is perfect!
Well, this week has been horrible. Thankfully, no one was injured. Our daughter's home was destroyed by fire. We are so grateful everyone is OK. Recovered items have been minimal.
The family consists of my daughter and her husband, their six year old son, 18 month old daughter and one week old baby girl. We keep kissing and hugging those children, glad they are healthy and spunky.
No one was hurt. We can deal with the rest, but these are tough times. Will you please pray for our family?
