No Cooking Required * Fudge Bites

Do you need a winter treat in a hurry?

These Fudge Bites are delicious!  Bonus:  Seven more scrumptious recipes are listed at the end of my post!

I'm joining these talented friends to bring you a lovely array of  Christmas treats today!

Baking is one of my favorite things to do, especially on cold days!  It's actually snowing today!  I love making cookies and pie.  Candy, though, is a different story.  That is somewhat outside my comfort zone.  My sister gifted me a vintage red gingham Better Homes and Gardens cookbook a few years ago.  It's what our mother used throughout our childhood, so it's my first choice when trying something new.

I cruised through the entire CANDY section and experimented with recipes that caught my eye.  There were some failures.  That's plural.  Failures.  With an "S" at the end.  I won't bore you with those.  ;-)  There are six recipes for fudge in my cookbook and a nice little paragraph titled "fudge repair".  Never one to just leave things alone, I muddled two of those recipes together.  Here it is!

No Cooking Required * Fudge Bites

4 ounces cream cheese

2 cups powdered sugar

6 tablespoons cocoa powder

3 tablespoons salted butter

2 teaspoons vanilla

Assorted candies and nuts for rolling.

(I chose chopped walnuts, pecans, coconut and red candy sprinkles this time)

Allow the cream cheese and butter to come to soften at room temperature.  Cream together with the rest of the ingredients.  Form into uniform size balls.  (I used my smallest ice cream scoop)  Roll in  nuts or candies of your choice.  Chill.  Serve cool.

Overall, this recipe was a success!  Handsome Husband and I loved the Fudge Bites with walnuts and pecans.  The coconut was OK.  Neither of us really cared for the candy covered Fudge Bites, as they seemed much too sweet for adults.  Children would probably enjoy all that sugar though!  ;-)

'Wishing you and yours a very Merry Christmas, filled with lots of treats!  Shall we see what my friends are bringing to the table?

;-)  -Marci

  5. This is probably the only type of fudge I would be successful at; as I have tried other fudge recipes but always seem to either overcook or undercook it. Pinned.

These seem very quick and easy for a last minute dinner party or hostess gift. Also I think I would love the coconut.
