There's something about sharing favorite family recipes that makes me feel sentimental. This one is no exception.
Let me tell you a little about Angie. Her brother is our son-in-law and her house is just a few miles from ours. At our daughter's wedding, she gave us a standing invitation to her Christmas Eve Celebration. That was our first experience with the recipe being shared today. Angie ALWAYS makes and brings corn casserole for family gatherings. Licensed to drive big trucks and heavy machinery, regardless of her petite size, most of her career was with the Oklahoma Highway Department and *wow* talk about "tough as nails".
So tough in fact, that by the time she saw a doctor for shoulder pain, her cancer was in advanced stages. Angie is in heaven now. Her funeral was the day before Easter this year. Many people miss her very much.
We are grateful to have known Angie. She genuinely enjoyed sharing just about everything. Her home, her plants, her recipes. I know she will smile about me sharing this one with you.
Angie's Creamy Corn Casserole
2 packages frozen whole kernel corn
1/2 cup melted butter
2 cans cheddar cheese soup
1 package cream cheese at room temperature
shredded cheddar cheese
Mix butter soup and cream cheese until combined. Add corn and stir again. Pour into 9" x 13" pan. Sprinkle cheddar on top. Back at 350 until warm and bubbly.
