Italian Egg Drop Soup Review for the Pinterest Challenge

With our sweet little flock of back yard hens, I'm always looking for ways to use eggs.  So this month, I chose to make/create - Italian Egg Drop Soup, a recipe from All Our Way.  I love Marisa's recipes and this one is super simple.  The first time I made it, a grocery list was prepared and all ingredients were one hand.  I pretty much followed all the steps with one exception.  She talks about blending spices along with salt and pepper.  We really like Cavender's Greek Seasoning, so I used that instead.

We  * L O V E * this recipe!  Handsome Husband and I both have erratic work schedules.  It's hard to say how long (or short) our day might be.  This is a super quick, yet delicious, meal for those long tough days.

I've gotten pretty lax on the ingredients, using pretty much whatever I have on hand.  For example, I don't always have chicken stock.  I just throw together a quick vegetable broth and keep going.  It's still a yummy soup!  Here's my recipe for vegetable broth.  From there hop over to All Our Way for Marisa's Italian Egg Drop Soup!

Stone Cottage Vegetable Broth

1 Large Onion
2-3 Cloves of Garlic
2-3 Carrots
2-3 Celery Stalks
3/4 cup white wine
6 cups water
Olive Oil

Using the larger screen on my chop wizard, I chop the onion and toss into a soup pot on medium high heat with a swirl of olive oil.  Then I switch to the smaller screen to chop the garlic and carrots.  Into the pot they go with a nice stir.  Last, I switch back to the larger screen and chop the celery.  When it goes in, I add the water and wine and lower the heat.  Simmer for about 10 minutes.  Easy, peasy, right?
