Basic Corn Bread - Favorite Family Recipes

My recipe is definitely a staple where I am from.  Some families add sugar, but we don't.  In the past, I've had handwritten recipes to share, but this one has been memorized for a very long time.  ;-)

Basic Corn Bread

1/2 cup salted butter
1 cup yellow corn meal
1 cup self rising flour
1 egg
1 cup milk

First, I zap the butter in our microwave for about 30 seconds so it is nice and soft.  Next comes the corn meal and flour.  I make sure the butter is evenly distributed before I add the cold egg and milk.  We like crispy corn bread, so in a well greased square baking dish, it is baked for about 25 minutes at a temp of 425.  This recipe is great for muffins, too, baking them at 425 for about 20 minutes.

  2. Marci, when I started reading your post about cornbread (without sugar) I suddenly remembered my mom making cornbread several times a week for dinner. You brought back memories I had almost forgotten. Unfortunately, she didn't use a recipe and made it by memory and I never paid attention when she made it. Now I can make yours to see if it's similar! Thanks for sharing!

  3. Sunday dinners with cornbread were frequent occurrences when I was growing up. My mother's recipe didn't call for sugar either. I'm pretty picky about cornbread and your recipe sounds just right.

  4. Corn bread is a staple in my home. There are very few recipes I can cook from memory but corn bread is one. We are one of those families who enjoy a pinch of sugar in our recipe but I know that is not for everyone. Your recipe sounds great and now I'd like a bowl of soup and some cornbread! Love your vintage photo, everyone is so happy!

  6. I am from Florida originally and I still remember my mom and grandma in the kitchen making corn bread or biscuits--so good. Will give your recipe a try!
