This recipe comes from a very dear neighbor, Beatrice Mason.  As children we were allowed to ride our horses to her house and she frequently offered drinks and snacks.  Talk about delicious memories!  Of course I grew up and moved away from my childhood farm.  Not long after my wedding, I wrote a letter to her asking for cooking advice.  The response from Mrs. Mason is still a treasure to me.  I've actually posted another recipe from her and it is right HERE!  Today it's all about


Homemade Cream Puffs





My muffin tin is pretty old and a bit scruffy, so I use cupcake wrappers in the bottom to help prevent sticking.  Mrs. Mason mentions cutting a slit in the side to fill them.  That works, of course, but when I am in a hurry, I just cut the tops off at the edge of the cupcake wrapper, fill and slap that top right back on again.

The surprise in the center of the cream puffs can be just about anything.  You can see Mrs. Mason's suggestions.  My favorite is Vanilla Pudding (click HERE for my pudding recipe) topped with Chocolate Sauce (HERE is our family's recipe).  Handsome Husband, though, likes to cut them in half and make sandwiches.

  8. I have made these and they were wonderful. I put a savory filling in instead of the typical sweet one and we ate them for a special supper several times. :)

  12. I baked every single day for 25 years. There was always a herd at our home mostly young males and always hungry. I never had a good recipe for cream puffs so I did not make them. I am not only pinning your recipe but writing it out to put in my little recipe card box. I am really thrilled you shared it.
